Ingredients
  

  • 1 cup plain yogurt
  • 1/2 cup apple juice
  • 1 cup ice cubes
  • 30 berries Aronia berries 30 berries is about 1 cup

Instructions
 

  • In a blender mix the plain yogurt, apple juice, ice cubes, berries, and banana, blend on high for 30 sec to 1 minute and enjoy!

Ingredients
  

  • 2 Cups Cransberry Juice or Cranbery Juice Cocktail
  • 1 12 oz. Bag of Fresh or Frozen Aronia Berries
  • 1 Cup granulated sugar
  • 1/2 Cup Stick Butter
  • 1 Cup Franks Hot Sauce More or less - Whatever you like.
  • 1/2 Teaspoon Cumin
  • 1/4 Teaspoon Cyan Pepper
  • 1/4 Cup Aronia Juice
  • 3/4 Cup honey

Instructions
 

  • Remove wing tips. Place wing pieces in a zip lock bag and pour in the two cups of Aronia Juice. Seal and refrigerate overnight. In a medium sauce pan, place Aronia, sugar, butter, Frank's Hot Sauce, Cumin, the cinnamon sticks, the 1/4 cup of Aronia Juice and honey. Bring to a boil, lower to simmer and simmer 10 minutes. Remove from heat and refrigerate until needed. The next day, drain off marinade and pat the wings dry with paper towels. Must be dry so they won't splatter in the hot oil. Heat oil in a large Dutch oven about half filled with oil. Heat to 350 degrees F using a candy thermometer. Heat over to 250 degrees F to keep batches warm between frying. Cook wing pieces in three batches by placing in hot oil and frying for 8 minutes. Try to maintain the oil at 350 degrees F. Reheat dipping sauce until it is a liquid again. Using a strainer, remove cooked wings to a large bowl and ladle in one quarter of the dipping sauce then toss in the bowl. Pour out onto a sheet pan and hold in the warm oven. Repeat for the second and third batches then pour out onto a serving platter. Take the remaining one quarter of the dipping sauce and serve on the side with the wings. ENJOY!

Aronia Pinwheel Cookies

Aronia Pinwheel Cookies

Ingredients
  

  • 1 cup Aroniaberries Fresh or Frozen
  • 3 cuos Flour
  • 1/4 cup packed brown sugar
  • 1 cup Pecans
  • 1 cup Butter softened
  • 1/2 teaspoon baking powder
  • 1 1/2 cup Granulated Sugar
  • 1/2 teaspoon Salt

Instructions
 

  • Process together berries, pecans and brown sugar into a paste in food processor and set aside. For the remaining ingredients: Beat softened butter for 30 seconds. Add sugar, baking powder and salt and beat until combined. Beat in eggs. Add flour (may have to work in by hand). Divide dough in half and refrigerate for 1 hour. When chilled, roll each half into a 10" square. Spread with filling and roll up. Chill rolls for at least 4 hours. Slice into 1/4" cookies; placing on parchment paper to bake. Bake at 375 for 8-10 minutes. Edges should be firm and bottoms lightly browned.

Aronia Vinagrette

 

Aronia Vinagrette

Aronia vinaigrette can be used as a salad dressing, most suitable for spring salad with raisins and nuts. The recipe makes around 200 mL; servings: 4-5; serving size 30-45 mL (2-3 tablespoons)

Ingredients
  

  • 1/2 cup Aronia Berries
  • 1/2 cup water
  • 1/4 cup Olive Oil
  • 1/4 cup vinegar (Balsamic or cider)
  • 2-3 teaspoons sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon tamarind paste(Optional)
  • 1 pinch cumin powder

Instructions
 

  • ½ cup of washed aronia berries is ground in a blender (Optional to strain In a sieve). Mix the ingredients and whisk to form an emulsion. Tamarind Paste is optional and can be added to increase the tangy flavor.

  • 1 1/2 cup all purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup whole milk
  • 2 tbsp vegetable oil
  • 1/2 tsp vanilla extract
  • 1/2 cup dark mini chocolate baking chip
  • 1 1/2 cups Aronia Berries
  • 1/2 cup all purpose flour
  • 3/4 cup brown sugar
  • 4 tbsp unsalted butter chilled and cut into pieces
  • 1/3 cup walnuts chopped

Instructions
 

  • For Cake: Heat Oven to 350 degrees. Coat an 8x8x2 inch baking pan with nonstick spray
  • In a large bowl, whisk together flour, sugar, baking powder and salt.
  • In a small bowl, whisk together egg, milk, oil and vanilla
  • Make a well in the center of flour mixture. Add egg mixture to well and beat with a spoon 1 minute, until evenly moistened; stir in chocolate chips. Spoon into prepared pan and top with Aronia Berries.
  • For Topping: In a small bowl, combine flour and sugar. Cut in butter with pastry blender until crumbly. Stir in walnuts. Sprinkle over Aronia Berries
  • Bake cake with topping at 350 degrees for 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool pan on a wire rack. Cut into 9 squares

Ingredients
  

  • 1 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 sticks margarine room temp
  • 1 1/4 cup brown sugar
  • 1/2 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3 cups rolled oats old fashioned or quick
  • 1 cup peacans
  • 1 cup coconut flakes
  • 1 cup aronia berries frozen

Instructions
 

  • Preheat oven to 350 degrees. Spray or use your margarine wrappers to grease 2 baking sheets.
  • Stir the flour, baking soda and salt together in a small bowl. Set aside.
  • In a bowl of a stand mixer w/paddle or hand mixer, cream margarine, sugars until smooth.
  • Add eggs one at a time, mixing thoroughly after each. Stir in vanilla.
  • Important: Mix on low and add dry ingredients only until incorporated. Over beating will make flat cookies.
  • Using a wooden spoon, stir in the oats, then pecans and coconut.
  • Add frozen aronia and fold quickly. This will keep the cookies from turning purple.
  • Spoon uniform 1 1/2" balls on baking sheet with 2" spacing.
  • Bake for 6 to 9 minutes. Remove when edges begin to turn. Cookie will continue to bake while cooling. After 5 minutes on baking sheet, remove to wire cooling rack.

Ingredients
  

  • 3 cups old fashioned rolled oats
  • 1 cup unsweetened chocolate chips
  • 2 cups cashew or mixed nuts
  • 1/2 tsp ground cinnamon
  • 1 tsp course salt
  • 2 tbsp olive oil
  • 1 cup honey
  • 1/2 cup maple syrup
  • 2 large egg whites
  • 4 cups aronia berries

Instructions
 

  • Preheat your oven to 350 degrees F.
  • Place aronia berries on a parchment lined sheet pan. Make sure they are evenly spread out. Roast in the oven for 15 minutes. Let cool when it is done.
  • Meanwhile, combine all dry ingredients in a large bowl, tossing to mix evenly.
  • Pour olive oil evenly into the mixture and stir to coat mixture.
  • Whisk two egg whites in a small bowl until frothy. Stir evenly into the granola mixture.
  • Pour maple syrup over the oat mixture.
  • Stir in dried aronia berries to oat mixture.
  • Spread it in a single layer (approx. 1/2 inch thick) on a parchment lined baking sheet.
  • Increase the temperature to 375 degrees F. Bake for 30 minutes. About halfway through the baking time, use a larger spatula to turn over sections of the granola to evenly brown it.
  • After 30 minutes, turn off the oven and leave the pan for another 15 minutes.
  • Transfer the pan from the oven to the cooling rack to cool completely. Once it is completely cool, break granola into bite size clusters.
  • Can store granola in an airtight container for 2 weeks at room temperature.

Ingredients
  

  • 1/2 cup butter at room temperature
  • 1 cup granulated sugar
  • 2 eggs large
  • 1 tsp vanilla
  • tsp baking powder
  • 1/4 tsp salt
  • 2 cups all-purpose flour
  • 1/2 cup milk
  • 2 1/2 cups aronia berries frozen
  • 1 tsp nutmeg

Instructions
 

  • 1. Heat oven to 375 degrees
  • 2. Grease 18 regular-size muffin cups (or 12 large size muffin cups)
  • 3. In bowl, mix butter until creamy. Add sugar and beat until pale and fluffy.
  • 4. Add eggs, one at a time, beating after each addition.
  • 5. Beat in vanilla, baking powder and salt.
  • 6. With spoon, fold in half of flour, then half of milk into batter; repeat.
  • 7. Fold in aronia berries
  • 8. Spoon into muffin cups and sprinkle a dash of nutmeg onto each muffin.
  • 9. Bake 15 to 20 minutes, until golden brown and springy to touch

Ingredients
  

  • Butter 1 cup room temp
  • Sugar 2 cups
  • Applesauce 3 cups unsweetened
  • Baking Soda 4 teaspoons
  • All Purpose Flour 3/12 cups
  • Cinnamon 2 teaspoons
  • Nutmeg 1 teaspoon
  • Cloves 1/2 teaspoon
  • Aronia Berries 1 cup thawed
  • Nuts 1 cup coarsely chopped

Instructions
 

  • Spray bundt pan with cooking spray for baking.
  • Cream butter and sugar.
  • Add egg to butter mixture.
  • Add applesauce and blend well.
  • Sift dry ingredients together three times, add to egg-butter mixture.
  • Fold in nuts and Aronia berries.
  • Pour mixture into bundt pan. (Mixture will be thick)
  • Bake for 1 1/2 hours, chick for doneness with toothpick. May need to add more time in increments of 15 minutes until toothpick comes out clean.
  • Cool in pan for 15 minutes.
  • Invert bundt pan onto serving plate.

Aronia Crumble Bars

Aronia Crumble Bars

Delicious, easy oatmeal crumble bars.

Ingredients
  

  • 3/4 cup butter or margarine
  • 1 cup brown sugar tightly packed
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 1/2 tsp baking powder
  • 1 1/2 cup oatmeal old fashioned
  • 1 jar aronia jam 10 oz.

Instructions
 

  • Cream butter and brown sugar until fluffy. Add vanilla. Mix dry ingredients. Add to butter/sugar mixture. Mix well. Press 1/2 of crumbs into a greased 9x9 baking pan (glass if cooking in microwave). Spread with jam. Crumble remaining mix on top. Bake at 400 degrees for 20-25 minutes. Cool. Cut into bars.
  • Microwave preparation: Mix as in recipe above. Put 1/2 of the crumbs into a glass 9x9 baking pan. Microwave on high for 3-4 minutes (depending on microwave strength). Spread jam on baked crumbs. Sprinkle remaining crumbs on top. Press lightly. Cook for 3 more minutes. Cool. Cut into bars
